[Media Sub Type] is one of Media Centers important predefined Library Fields. MC tries to assign an appropriate [Media Sub Type] to many file types automatically upon import, and uses these categories in the predefined Media Views (to separate, for example, TV Shows from Movies). Also, certain Media Sub Types have have special behaviors in regards to bookmarking and the Automatic Metadata Lookup system among other features.
